Leek and Potato Soup

This is Angela's soup, one of the soups made by pupils in the Spaldwick Community Primary School Soup Competition.

  • 1kg (2lb 4oz) potatoes
  • 2 leeks
  • chilli flakes
  • splash of cream
  • salt and pepper
  • 2 cloves of garlic
  • half a green chilli
  • 1 litre (1¾ pints) of vegetable stock
Healthier version
You can leave out the cream for a lower fat option. Remember that msot stock already contains salt so you may not need to add more.

  1. Cut up the leeks, chilli, onions and garlic
  2. Chop up the potatoes
  3. Fry the onions, leeks, potatoes, garlic and chilli with a knob of butter
  4. Add the vegetable stock
  5. Simmer for 20 minutes then take off the heat
  6. Allow to cool and blend to a smooth texture
  7. Add salt, pepper, cream and chilli flakes to taste
  8. Enjoy
