Garnish (Food):
An edible decoration added to a savoury dish.

Gelatine is a colourless or slightly yellow, transparent protein formed by boiling the specially prepared skin, bones, and hooves of animals. It is used to set foods and make jelly.

To brush dough or pastry with egg yolk or milk so that it looks golden and shiny when baked.

Grater:
A device that allows you to produce fine shreds of food. A typical grater is usually a stainless steel device with a rough surface and different sized holes on each side, suitable for grating different foods. For example, most graters have a very fine side for grating foods such as nutmeg and a side with bigger holes for grating foods such as cheese.

Grater - Mouli:
A circular metal tool which breaks down food when a handle is turned by passing the food over a grating disc. A mouli grater gives a very smooth result and can be used instead of a food processor or blender for small amounts of food. It is ideal for puréeing.

Griddle:
A flat plate of metal used for frying, grilling, and making pan breads (such as pancakes, tortillas, chapatis, and crepes). Traditional iron griddles are circular, with a semicircular hoop fixed to opposite edges of the plate and rising above it to form a central handle.

To cook by direct radiant heat or flame. The heat is usually from one source and the food needs to be turned to ensure it is evenly cooked. The term can also mean the part of the cooker used for this purpose.
