To fry is to cook a food in hot oil or fat. Shallow frying uses a small quantity of fat in a shallow pan. The food is turned so that all sides are evenly cooked. Deep frying is when the food is fully immersed in the oil or fat using a deeper pan. Here the cook demonstrates the shallow frying of onions, also known as sweating down.
